Herbed Meatballs

Meatballs are a great party food. They take very little hands on preparation. You can assemble them ahead, then bake them close to serving time. For a buffet, you can briefly cook the meatballs to medium rare, then toss them in a crock pot with barbecue sauce or spaghetti sauce set on low. This recipe is wheat-free, gluten-free, and can be made dairy-free. You can use beef, bison, lamb, or even turkey, and a variety of different herbs and spices to suit your tastes.
